Allergen glossary
In our allergen glossary, we explain the 14 main allergens that are particularly relevant in the EU and must be listed accordingly in ingredient lists. This helps you to categorise recipes more quickly and select the right products for different requirements – whether in a professional kitchen or when planning a clear menu. This is based on the EU Food Information Regulation (LMIV), which lists substances and products that may trigger allergies or intolerances.
Cereals containing gluten
and products from them
These include:
all types of gluten-containing cereals: wheat, barley, oats, rye, spelt, green spelt, einkorn, emmer, kamut
Found in:
bread, baked goods and pasta, tarts, cakes, biscuits, muesli, etc.
Crustaceans
and crustacean products
These include:
Prawns, crayfish and crayfish-like crustaceans, lobsters, crabs, krill, langoustines, shrimp, scampi, spider crabs
Found in:
Sashimi, surimi, bouillabaisse, crab butter, shrimp paste, etc.
Eggs
and egg products
These include:
Eggs from hens, geese, ducks, turkeys, quails, pigeons and ostriches
Found in:
egg yolks, egg whites, whipped egg whites, sponge fingers, meringues, cakes, tarts, ice cream, sauces (e.g. hollandaise sauce, etc.), mayonnaise, minced meat, etc.
Fish
and -fish products
These include:
all types of gluten-containing cereals: wheat, barley, oats, rye, spelt, green spelt, einkorn, emmer, kamut
Found in:
bread, baked goods and pasta, tarts, cakes, biscuits, muesli, etc.
Peanuts
and peanut products
These include:
peanuts, peanut oil (including as a frying fat), peanut butter

vegetarian meat substitutes, dressings, pesto, exotic cuisines (e.g. Asian, Indian), nut mixes, etc.
Soy beans
and soy products
These include:
soy beans, soy sprouts, soy flour, soy semolina, soy milk, soy protein, soy oil
Found in:
soy desserts, tofu, miso, tempeh, seasoning sauces, vegetarian spreads and dishes, surimi, bread and baked goods, sausages, etc.
Milk
and dairy products
These include:
Milk, butter, cream, crème fraîche, cheese, quark, yoghurt
Found in:
Margarine, sour cream, whipping cream, vegetable spreads, chocolate, baked goods, nougat, ice cream, desserts, coffee creamer, mashed potato, etc.
Nuts
and nut products
These include:
cashew nuts, hazelnuts, macadamia nuts, almonds, pecans, Brazil nuts, pistachios, walnuts
Found in:
nut oils (hazelnut, walnut, almond), nut paste, nut butter, etc.
Celery
and celery products
These include:
celeriac, celery seeds, stalks or blanched celery
Found in:
vegetable juices containing celery, seasonings (celery salt), spice mixes, vegetable soups, stock, salads, snacks, sauces, etc.
Mustard seeds
and mustard products
These include:
Mustard, mustard seeds, mustard oil, mustard sprouts, leaves and flowers
Found in:
Marinades, soups, sauces, chutneys, curries, spice mixes, sausages and meat products, pickled vegetables, salads, etc.
Sesame seeds
and sesame products
These include:
Sesame seeds, oil, butter, flour, salt, and sesame-based seasoning pastes
Found in:
Bread, pastries, hamburger buns, crackers, breakfast cereals, desserts, falafel, hummus, etc.
Sulphur dioxide
and sulphites
These include:
Sulphur dioxide and sulphites (at levels exceeding 10 mg/kg or mg/L)
Found in:
Wine (sulphited), other
alcoholic drinks, sulphited dried fruit (plums, apricots, etc.), horseradish products, etc.
Lupins
and lupin products
These include:
all types of spurge plants
Found in:
vegetable protein (lupins)
in baked goods and vegetarian meat substitutes, lupin flour, lupin sprouts, etc.
Molluscs
and mollusc products
These include:
shellfish (venus clams, mussels, scallops, oyster), snails, cephalopods (squid, octopus)
Found in:
black pasta, surimi, sashimi, bouillabaisse, paella, etc.

Tested recipe
After cooking, the food can
be rapidly cooled to storage temperature in a blast chiller within a short time and then reheated before distribution.
No labelling required
on menus
Products bearing this seal do not contain any ingredients that are required to be listed on menus under Section 9 of the Regulation on the Authorisation of Food Additives.
Also suitable for sauces

Products bearing this seal are also suitable for making a sauce. The mixing ratio for the sauce is stated separately on the packet.
Instantly soluble
for quick preparation
When cooking or frying, our instant products can be sprinkled or stirred directly into liquids of any temperature without forming lumps.

for a vegetarian diet

Products bearing this symbol are based on a vegan formula (i.e. made exclusively from plant-based ingredients).
Source of fibre
Fortified foods
This label is awarded to products containing at least 3 g of fibre per 100 g of finished product or 1.5 g of fibre per 100 kcal. Fibre supports normal bowel function.
Amylase-resistant
Consistent texture
Products bearing this seal are bound in such a way that the enzyme amylase, which is present in saliva, cannot break down the bond, thereby making them easier to swallow.
Free from major allergens
as per recipe
These products are manufactured according to recipes that are free from the 14 major allergens listed in the Food Information Regulation (LMIV).
(Traces that are unavoidable for technical reasons cannot be ruled out.)
Gluten-free
recipe
Products bearing this seal have been produced without gluten and are suitable for people with a gluten intolerance.
Yeast-free
recipe
Products bearing this seal have been produced without the addition of yeast.
Lactose-free
recipe
Lactose-free according to the recipe. Lactose can cause bloating, flatulence, abdominal pain, diarrhoea and nausea in those affected.
Palm oil-free
recipe
Products bearing this seal are based on a
palm oil-free formula.
Onion-free
recipe
Products bearing this label do not contain onions. Onions can cause bloating and stomach ache in people with sensitive stomachs.
